These anchovies are selected from the spring season catches in the Cantabrian Sea by Conservas Catalina S.L. Processed by hand one by one in the artisanal manner. They are larger and we find their colour, flavour, texture put these anchovies as a must have. In the processing plant they are first salted and then rest there for between 6 and 9 months. When this time is over, which is essential for the aging process, they are then handled one by one, removing the skin and part of the salt.
