Capers are the unopened flower bud of the caper bush, a hardy drought resistant low lying bush. The buds are picked before opening, dried and pickled in salt. Once the salt is rinsed off, they retain a truer caper flavour without the acidity left by vinegar. Capers are described by their diameter in millimetres. These tiny Spanish ‘non pareilles’ capers measure no more than 6-7mm.
