A master of cuisine of the Joseon Dynasty, this is the highest quality chilli paste of a Korean master where the traditional method and recipe is passed onto generations. This recipe pays homage to the slow food approach. Made from non-GMO soybeans, this gochu jang is very different to the others. Glutinous rice is cooked, malt powder is added to aid fermentation due to its enzymatic profile, drained and then caramelised. The result, a product rich in its flavour profile.
