Hand selected Prime Quality Australia Beef is trimmed to a strict specification thoroughly removing all the fat. Salted and carefully spiced using spices such as juniper berries, cinnamon and nutmeg so that the flavours penetrate every fiber of the meat. Filled into an attractive net left to cure for a few days, then air dried and matured for up to three months in order to generate its distinctively rich and refined flavour.
