Reviving Japan’s once-extinct stork population is not just a story of conservation in the city of Toyooka, Hyogo Prefecture. To make Toyooka an oasis for storks, organic farming is promoted to ensure that the farmland remains rich in the small creatures that the birds feed on.
Rice grown through this stork-friendly method has been named Kounotori Mai (stork rice) and is a premium brand of rice. This special koshihikari rice has a soft earthy aroma, great texture and flavour.
