Then they are steep slowly over time, letting the cool climate botanicals release their soft anise notes and bright green aromatics. Nothing is filtered or pasteurised so the flavour stays true to the plant. The result is an intensely aromatic vinegar with a clean herbal lift and a rounded apple backbone. It has the energy of fresh tarragon and the quiet complexity of long steeping. Use it to baste fish or white meats, add depth to dressings or bring a sharp green note to sauces.
