The Good Grub Hub (TGGH)’s Shaved Hanakezuri Kombu is the perfect vegan alternative to katsuobushi bonito flakes. This product is made from 100% dried Ma Kombu – one of the best quality and most highly prized forms of dried kelp from the Kayabe district in Hokkaido. The leaves of Ma Kombu are much larger and wider than other types of kombu, and only the thickest ones are carefully selected before being thinly shaved like kezuribushi. Delicate and aromatic, it is ideal for creating umami-rich broths for soups, noodle, and simmered dishes.
