Description
Occurring naturally in citrus fruit, Citric Acid is used as an acidifier, flavouring agent, emulsifier or as a natural preservative/conservative in the food manufacturing industry. Citric acid can be added to ice cream as an emulsifying agent to keep fats from separating, to caramelising, to prevent sucrose crystallisation, or to recipes in place of fresh lemon juice. 1/4 tsp of Citric Acid is equivalent to 1tbs of lemon juice.
