Boquerones are small, fresh anchovy fillets that have been marinated in an escabeche of vinegar, olive oil, sliced garlic and chopped parsley. Highly popular throughout Spain they are served on a slice of baguette as a tapas dish or can be served simply on toast spread with tomatoes and extra virgin olive oil.
