From a traditional home-made cannery business, Romanzini became a pioneer in the marketing of frozen prepared snails in the 1970s and chilled snails in the 1990s. Snail meat after drained is either used in shell with Burgundy stuffing, or for cassolettes or other aperitif recipes.
