Designed for making soups and called Guk (soup in Korean) Gan-Jang, this is the first liquid taken off earlier during fermentation for minimum contact with soy beans to reduce the dark colouring. Lighter in colour and taste then normal soy but still carrying all characters of traditional Jang.
