Toufood Citrüs Fibre is a versatile ingredient with emulsifying, stabilising and thickening properties. It also has the ability to act as a fat substitute, making it an ideal choice for vegan or vegetarian preparations. This fibre can emulsify both hot and cold products and is unaffected by pH variations, making it highly adaptable to different processes and formulations. One of the advantages of Citrüs Fiber is its ability to prevent syneresis, which is the separation of liquids during freezing. This makes it a very useful ingredient in the production of products such as eggless mayonnaises, creams, ganaches, whipped doughs, sponge cakes, sourdoughs, ice creams and drinks.

The way to use Citrüs Fiber in preparations is to mix it in one of the two phases, either water or fat, and gradually integrate it into the other phase while continuously mixing. This ensures proper emulsion and even distribution of the fibre in the final product. In terms of dosage, the usual quantities of Citrüs Fiber vary between 2 and 15 grams per kilogram of product, depending on the specific application and the desired characteristics.
