Description
Often found in citrus fruit, tomatoes, and potatoes and better known as Vitamin C, Ascorbic Acid is used in the food industry as a means to prevent oxidation and discolouration in prepared foods and as an added vitamin c supplement. It can be used to maintain the green colour of vegetables and herbs in cooking as well as prevent browning of cut fruits and vegetables such as apples, avocados, and potatoes.
