This pure Australian wild honey is produced from 100% natural comb in bee-friendly Warré apiaries in the high altitude woodlands of the Central Tablelands, NSW. This honey can be described as a ‘La Niña’ honey – a result of this weather event that occurs once every 10 years or so. The bold characters of Wild Honeys are not as present here, instead this is an ethereal honey with subtle herbal notes, a malty character and a creamy fudge-like texture that perfectly captures time and place.
