Its low sweetness (POD 24%) and antifreeze capacity (PAC 56%) make it an essential ingredient to prevent sugar recrystallization in candies and gummies. It also provides elasticity and prolongs the freshness of baked goods such as pastries, ganaches, truffles and other confectionery products.
