Tamarind is the fruit of the tree of the same name. The pulp of the tamarind is easy to extract, it is softened in boiling water and the paste is made. It gives an acidic flavor typical of Indian curries and sweet and sour mixes. Ideal for creating sauces such as Amai or Pad Thai for fish. Also curry or chutney.
