Emmer is an ancient wheat variety with a distinct flavour profile and different protein characteristics to modern wheat. The stone milling process gives a stronger flavour and retains more nutrients when compared with roller milled flours. It is an ingredient that can be used as an alternative flour in many applications such as bread making. Must be cooked before consuming.
